Rasmalai Cake Recipe | Eggless Rasmalai Cake - Rasmalai is an Indian dish which is made with paneer but we are using paneer in so many sweet dishes than to give a different twist people used to make a malai or rabri. Eggless Rasmalai Cake is one of the super delicious cake you can have.
This dessert is originated in Kolkata. so today we are going to make a cake as a substitute for ras malai but the taste is totally the same. So here we present the Eggless Rasmalai Cake Recipe.
Preparation time - 20 minutes
bake time - 30 minutes
cooking time - 15 minutes
Ingredients:-
flour 1 cup
curd 1/2 cup
sugar 3/4 cup
milk 1/2 cup
baking powder 1/2 tbsp
baking soda 2 tsp
custard powder (optionally)
Ingredients For Rabri
milk 1 cup
sugar 1/4 cup
saffron (optionally)
powdered milk 1/4 cup
rose water (optionally)
Recipe For Rabri:-
step 1 Take a heavy bottom pan put the milk in it and heat it also stir it continuously.
step 2 add sugar and powdered milk in three batches so that it will not stick to the pan.
step 3 boil the milk and add saffron, rose water, and stir continuously otherwise it will stick at the bottom of the pan.
step 4 reduce the milk half or until the milk consistency looks like heavy cream.
step 5 off the heat and cool it for at least 10 minutes.
Recipe for Eggless Ras malai Cake:-
Step1 Preheat the oven to 180*c. And also grease the cake tin for the cake batter.
Step2 Take a bowl put curd and sugar in it .mix them properly until sugar dissolves we can also replace curd with 2 eggs. This step is very important for our cake it will incorporate so much air,
Step3 Now add flour into the bowl and gently mix it and also add milk simultaneously. So there will be no links.
Step4 Now when we get the perfect consistency for the cake then in the last add baking powder and baking soda and mix it properly but don't overmix it.
Step5 bake the cake in a preheated oven for 30 minutes until when we put a screw in it and it comes clean.
Step6 As the cake baked take out from the oven and let it cool for 7 minutes.
Step7 We need a warm cake, not a hot cake. now make some small holes in it and pour the rabri on the cake and then put the cake in the refrigerator for half an hour.

Some Extra Tips:-
1.if you are a vegan person then you can replace milk with almond milk.
2.we can use brown sugar in the bake, not the rabri.
3.we can also replace normal flour with almond flour.
