Delicious Marshmallow Cheesecake
This delicious marshmallow cheesecake recipe is quick, easy, and to die for! It’s a very light and fluffy type of cheesecake, so it’s perfect for after lunch, dinner, or even as a late night snack!
Main Ingredients:
- 200g (2 cups) of miniature-sized marshmallows
- 1/2 + 1/4 cup of milk
- 1 pack (250g) cream cheese at room temperature
- 1 cup whipping cream
Crust Ingredients
- 6 tablespoons of melted butter
- 1 + 2/3 cup of graham crackers
- 4 tablespoons of sugar
Strawberry Sauce Ingredients
- 12 fresh or frozen strawberries
- 1+1/2 tablespoons of sugar
Directions:
- Make the crust by combining the melted butter, graham cracker crumbs and sugar by mixing until combined in a bowl. Press the mixture into a 9″ round pan.
- Melt the marshmallows in milk over low heat in a saucepan. Remove from heat once marshmallows are completely melted and the mixture is smooth.
- Take a large bowl and beat cream cheese until smooth. Slowly and gradually add the marshmallow mixture to the cream cheese and beat until smooth. Let cool for 15-30 minutes.
- In a large bowl, beat whipping cream until stiff. Gently fold the whipping cream into the cream-marshmallow mixture until completely mixed and smooth, but do not over mix. Spread the mixture into the graham crust.
- Refrigerate for at least 6 hours or overnight.
- Make the strawberry sauce by putting the strawberries and sugar in a bowl. Refrigerate for 3 hours or until sugar is dissolved. Put the mixture in a saucepan and cook for 10-15 minutes or until it thickens.
- Once the cheesecake has set in the fridge, pour the sauce over, and serve.
