Blueberry Cake Recipe
This is an easy blueberry cake recipe that is quick and delicious.
Ingredients:
- 3/4 cup fresh or frozen blueberries, thawed
- 2/3 cup granulated sugar
- 1 egg, slightly beaten
- 1 1/2 cups all-purpose flour
- 3/4 cup whole milk
- 1/4 cup vegetable shortening
- 3 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- Sugar for sprinkling
Directions:
- Preheat oven to 350F/175C.
- In a medium bowl, cream together sugar and shortening and add slightly beaten egg and vanilla extract.
- In another bowl, mix 1 1/2 cups flour with baking powder and salt.
- Add the flour mixture to the cream mixture, alternately with the milk.
- In a smaller bowl, mix together 1/4 cup flour with blueberries.
- Gently fold the blueberries into the cake batter.
- Pour batter into 8″x9″ baking pan and sprinkle with sugar.
- Bake for 35 minutes or until toothpick inserted comes out clean.
