Banana Cake Recipe
This is a great banana cake recipe that can also be made into cupcakes, muffins, or banana bread.
Ingredients:
- 4 ripe bananas, mashed
- 1/2 cup chopped walnuts
- 2 1/2 cups all-purpose flour
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 3/4 cup light brown sugar
- 2 eggs
- 2/3 cup buttermilk
- 1 tablespoon baking soda
- 1 teaspoon vanilla
- pinch of salt
- icing, for top (optional)
Directions:
- Preheat oven to 350F/175C and grease and flour 2 round 8 inch cake pans.
- In a small bowl, mix together, flour, baking soda, and salt and set aside.
- In a large bowl, cream butter, brown and granulated sugars until fluffy.
- Beat in on egg at a time into the sugar mixture and add vanilla. Mix in mashed bananas.
- Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts and pour batter into cake pans.
- Bake for 30 minutes or until toothpick inserted comes out clean.
