Apple Cranberry Cake
This is a deliciously moist apple cranberry cake recipe. Top it off with caramel sauce or sprinkle with powdered sugar.
Ingredients:
- 4 cups finely chopped apples
- 1 1/2 cups coarsely chopped cranberries
- 2 cups all-purpose flour
- 2 large eggs
- 1 cup chopped pecans or walnuts
- 2 cups granulated sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons baking soda
- 1 tablespoon lemon juice
- 1/2 cup vegetable oil
- 1 1/2 teaspoons vanilla
- 1/2 teaspoon salt
Directions:
- Preheat oven to 350F/175C. Grease and flour a 13″x9″ baking pan.
- In a bowl, combine chopped apples and cranberries. Toss with lemon juice and set aside.
- In another bowl, combine flour, baking soda, salt, and cinnamon. Set aside.
- Using an electric mixer to beat eggs, oil, sugar, and vanilla until smooth and blended.
- Slowly beat in the dry ingredients until moistened. Stir in apple-cranberry mixture and chopped nuts.
- Spread batter into prepared pan.
- Bake for 45-55 minutes or until cake springs back when touched.
- Frost with caramel sauce or powdered sugar.
