Apple Cranberry Cake

This is a deliciously moist apple cranberry cake recipe. Top it off with caramel sauce or sprinkle with powdered sugar.

Ingredients:

  • 4 cups finely chopped apples
  • 1 1/2 cups coarsely chopped cranberries
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 cup chopped pecans or walnuts
  • 2 cups granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1 tablespoon lemon juice
  • 1/2 cup vegetable oil
  • 1 1/2  teaspoons vanilla
  • 1/2 teaspoon salt

Directions:

  1. Preheat oven to 350F/175C. Grease and flour a 13″x9″ baking pan.
  2. In a bowl, combine chopped apples and cranberries. Toss with lemon juice and set aside.
  3. In another bowl, combine flour, baking soda, salt, and cinnamon. Set aside.
  4. Using an electric mixer to beat eggs, oil, sugar, and vanilla until smooth and blended.
  5. Slowly beat in the dry ingredients until moistened. Stir in apple-cranberry mixture and chopped nuts.
  6. Spread batter into prepared pan.
  7. Bake for 45-55 minutes or until cake springs back when touched.
  8. Frost with caramel sauce or powdered sugar.
